This recipe for brown butter chocolate chip cookies in an absolute showstopper. The combination of salted brown butter, vanilla paste and bittersweet chocolate is a dream.

Like all the best recipes, this one involves an extra step to truly take it over the top. You’ll first need to brown salted butter by heating it on the stove. As it heats, the milk fat begins to toast a bit, changing the flavor and aroma of the butter.

I added an optional step to include dry milk in the butter when browning it. This amps up the flavor and aroma.

You won’t believe how amazing the browned butter, the cookie dough and the cookies smell!

My other note about this recipe is that I am very specific about the brands for ingredients. Though you can swap them, I wanted to mention the ones I always use because they are tried and true.

Brown The Butter

  1. Heat your salted butter in a saucepan over low/medium heat.
  2. The solid butter will first melt and you may notice foaming. Eventually, solid brown bits will begin forming at the bottom of the pot.
  3. Optional: Once brown bits begin to appear, add 2 tablespoons of dry milk.
  4. Keep an eye on it and stir frequently. It can burn quickly and you’ll want to remove it from heat before this happens.
  5. Pour the brown butter into your mixing bowl.
  6. Let the brown butter cool to room temperature. You can keep it on the counter for a few hours or place it in the fridge for about 20 minutes to speed things up. If it gets too hard in the fridge, let it soften a bit before moving on.

Mix The Batter

  1. Once the butter is cool, mix in white sugar and brown sugar on low, then medium for 3 minutes. It eventually takes on a soft, fluffy texture. Make sure to scrape the bottom of the bowl really well while doing this (butter can stick to the bottom if not.)
  2. Add eggs one at a time, scraping the sides of the bowl between each.
  3. Mix in vanilla paste.
  4. In a separate bowl, stir together flour, baking powder and baking soda. Slowly add this to the mixer along with the butter and sugars. I typically just pulse the mixer several times without letting it run too long.
  5. Mix in chocolate chips.
  6. Scoop dough with a cookie scoop and place 1″ apart on the cookie sheet.
  7. Sprinkle the tops with flaky salt.
  8. Bake at 350 for 8-10 minutes.
